Opti-MUM Red™ is a part of the newest generation of yeast derived nutrients. Opti-MUM Red is sourced from a specific known wine yeast that is naturally high in polysaccharides. Adding Opti-MUM Red at the beginning of fermentation increases the availability of polysaccharides at a time when polyphenols are being released and diffused. This maximizes the formation of polyphenol-polysaccharides chains. Using Opti-MUM Red results in red wines that are more intense in color, have more rounded mouthfeel, and a decreased perception of astringency. It is OMRI listed.
