Potassium is found in fruits and fermented products. Natural potassium can increases as fruit matures. Potassium is also found in certain chemical additions, such as potassium metabisulfite. Final concentrations depend on addition rates of potassium containing compounds, as well as the amount of extraction from fruit through pressing and maceration. Potassium is a principal ion found in brewing water and can effect flavor profile. It is also an important mineral for yeast growth and is shown to have a relationship with pH and acidity.
