Final concentrations depend on addition rates of potassium containing compounds, as well as the amount of extraction from fruit through pressing and maceration. Potassium is a principal ion found in brewing water and can effect flavor profile. It is also an important mineral for yeast growth and is shown to have a relationship with pH and acidity.
