Sodium is found in fruits due to uptake from the soil, water, and other environmental impacts. Sodium may also be contributed through the use of certain sodium containing chemical additions. Sodium is also a principal ion in brewing water that can enhance perceived flavor. With the dependence on other ions (chloride and sulfate), sodium can enhance sweetness or can create an unpleasant harshness.
